I graduated from BYU in Audiology and Speech Language Pathology and I am working as an SLPL at a school district. I enjoy it and it keeps me SUPER busy. I also teach spin classes at LA Fitness. I refuse to ever pay for a gym membership. I live with 2 awesome girls: Erika and Christina. I love Diet Dr. Pepper, ritz crackers, bunny tracks ice cream, shopping, cooking, sleeping, reading, and working out. I have the 4 cutest nephews in the world: Kaden, Jack, Nixon and Bentley and 1 adorable niece: Alena. This is my simple yet really awesome life!

Spencer is Home!

Well Spencer finally came home from his mission Friday.  It was an awesome reunion and I am so surprised how emotional we all were.  Well...not really I guess but it was amazing!  I was so anxious to get there on time and we hit a little traffic on the 202 West but with my driving...we were just fine.  :)  But I will add more pics later with a better update because I am tired and tomorrow will be a long day. 





We were able to attend the temple after the aiport since Spencer really wanted to go as a missionary since the Guam mission most definetly doesn't have a temple anywhere nearby.  It is so nice to have him home.  He is exactly the same but just a better version of himself.  He just has the spirit so strongly and it makes me realize I need to be better.  And I love what the mission teaches.  We took him shopping Saturday and he was going to visit some friends so I told him to be home at 12:30 sharp and not to be late.  Well...I kind of expected him to roll in around 12:45 or 1pm, but no he walked in the door at like 12:29!  That has never happened before!  Love it!

It was lovely.  And I don't use that word...ever.  Such a beautiful love story and it is a true story.  Even better!  It was kind of slow but I didn't care since it was so good.

A Good Read


I just finished the series "The Great and The Terrible" and it was so good!  My sister got me into them and it is the fastest I have ever read a series.  Which I guess isn't saying much since it took me 3 years to read Twilight and 4 to read Harry Potter.  I was in school...what can I say?  Anyways...I wish they could make these into movies because Sam Brighton would be really fun to have a crush on.  Just kidding.  But it is a story about a few who knew each other in the pre-existence and then were placed on earth in different places and how their lives all eventually intertwined.  The story line is basically all about war and living in the last days and the fight of good versus evil. 

After you finish whatever book you are reading, get started on this one.

I did get my pre-order of the 3rd book of Hunger Games in the mail yesterday so I need to finish up my work early so I can get started.

Recipe 7: Egg-In-The-Hole

It was late and I was really tired and hungry (not a pretty combo) the other night and didn't have a lot of options.  So I looked in my fridge and found some eggs, butter and bread and made this loveliness.  It reminded me of my Grandpa Nelson because he would never eat his eggs without toast.  And it did not disappoint.  Simple, easy and delicous. 



Please don't pay much attention to the slab of butter to the left.  I didn't have much butter left and I didn't want to stick a tiny piece back in the fridge or throw it away....so I did the practical thing...used it all...




PERFECT!


Ingredients:

sliced bread
butter (obviously)
large eggs
salt and pepper

Process:

Begin by using a biscuit cutter (ya right like I own this) or drinking glass (sounds more like it) to cut a hole in the center of the bread.  Heat 2-3 tablespoons butter in a skillet over medium to low heat.  Place bread in pan and allow it to soak the butter.  After 1 minute, crack the egg in the hole.  (never thought I would ever use a sentence like that in my lifetime). Sprinke with salt and pepper and cook for another minute.  With a spatula, flip to the other side.  Sprinkle with salt and pepper and cook the second side until the egg has reached its desired doneness.  Eat with a large glass of milk.

Take a break before you proceed to workout.

Stacie's Wedding


Stacie's wedding was last Thursday and the bridal shower was the night before.  It was a fun couple of days and it was nice to see everybody.  The girls flew in from Utah and it was so fun to spend time with them!













Stacie looked so pretty and so happy.  The sealing was beautiful.  Jesse and Stacie make such an awesome couple and I am so happy for them!

Chocolate Cake


These past few days have been kind of crazy and hard and when I came home from work a few days ago...

this is what my roommate Carly had made for me.  A double layered chocolate cake.  I about cried.  It was

so sweet.  I took it to my family's for dinner yesterday and my nephew Jack smashed the glass lid all over

the ground.  Just got to love him.  "Sorry kaka, sorry kaka".  It was so cute.  But it was delicious!

PS...Shark Week is this week in case you were wondering.

Work starts tomorrow with meetings and trainings and then therapy starts full swing on Monday.  My life is about to be consumed with abnormal communication.  My tech license should be coming any day now.  I will be checking the mail regularly.
